Aga instructions

Sue Day of Hindolveston (who is a fablulous cook) has kindly provided the following notes for Aga users:

My Aga is new, so it's quite hot. Older models may need more time, so I have added some leeway in the timings.

Cooking the Perfect Pie in an Aga:

  • Follow the standard instructions for mixing and applying the first coat of glaze then...
  • Place on a baking sheet on the grid shelf, which should be on the floor of the roasting oven
  • Take out after 6 to 8 minutes (depending upon how hot your Aga runs, i.e. older models may need the full 8 minutes) and apply the second coat of glaze, then return to the oven
  • Leave for another 6 to 8 minutes before applying the final coat of glaze
  • Return to the oven for 25 to 35 minutes, placing the cold plain shelf on the second set of runners, until the pies are a rich brown and oozing dark liquid
